To produce this wine a spirit is first made from a Kiuchi Brewery white ale. The Ume fruit (Japanese Plum) is then marinated in this spirit for a year, producing a very delicate Ume flavour with a slight fragrance of almond. It is sweet, with a refreshing acidity and is best enjoyed slightly cooled, on ice or with soda.
