EIKUN Tokubetsu Junmai Hiyaoroshi is a seasonal sake produced by Saito Shuzo (齊藤酒造) in Fushimi, Kyoto, one of Japan’s most historic sake brewing regions. Fushimi is well known for its soft underground water, which produces sake with elegant texture and smooth drinkability.
This sake belongs to the Hiyaoroshi (ひやおろし) category, a traditional autumn seasonal release in Japan. Hiyaoroshi sake is brewed during the winter brewing season and allowed to mature slowly through the spring and summer. Unlike freshly brewed sake, this gentle aging allows the flavors to soften and harmonize, developing a deeper and rounder profile.
The sake is usually pasteurized once after pressing but not again before bottling, preserving freshness while maintaining the mellow character gained during maturation.
The designation Tokubetsu Junmai (“Special Pure Rice”) indicates that the sake is brewed using high-quality rice with special brewing methods or higher rice polishing standards than standard Junmai.
The result is a sake that captures the spirit of autumn—richer, smoother, and more complex, yet still balanced and elegant.
