EIKUN Junmai Daiginjo Banshuu Wataribune is produced by Saito Shuzo (齊藤酒造) in Fushimi, Kyoto, one of Japan’s most historic and respected sake-brewing regions. Fushimi is famous for its soft, pure underground water, which contributes to sake with a smooth and elegant profile.

This premium sake is brewed using Banshuu Wataribune, a traditional and rare sake rice variety cultivated in Hyogo Prefecture. Wataribune is historically significant because it is the ancestor of the famous Yamadanishiki rice, often called the “king of sake rice.” Its large grains and excellent starch structure allow for highly refined brewing.

The rice is carefully polished to Daiginjo standards, removing the outer layers to reveal the pure starch core. Through slow, low-temperature fermentation, the brewery develops the elegant aromatics and silky texture that define high-quality Junmai Daiginjo.

The result is a sake that combines heritage rice, traditional brewing techniques, and Kyoto’s soft water, producing a style that is both refined and beautifully balanced.
