The number “55” represents the rice polishing ratio (Seimai Buai 精米歩合), meaning the rice used in brewing has been polished down to 55% of its original size. This level of polishing qualifies the sake as Junmai Ginjo, a style known for its balance between aromatic elegance and expressive rice character.

Using carefully selected sake rice and traditional fermentation methods, Daimon brews this sake slowly at controlled temperatures. This process allows the yeast to develop delicate fruity aromas while preserving the natural sweetness and umami from the rice.
