Corte Vetusto Ensamble is a testament to the skill of Maestro Mezcalero Juan Carlos Gonzalez Diaz. In the world of mezcal, an "Ensamble" is the ultimate test of a distiller's ability to manage different agave species that cook and ferment at different rates. This bottling typically brings together the sugars of Espadín, the structure of Madrecuixe, and the floral aromatics of Tobalá.

The agaves are roasted together in a conical earthen pit, creating a unified smoky profile. During fermentation, the wild yeasts indigenous to Mitla work on the unique sugar compositions of the three plants. The Madrecuixe (a wild Karwinskii agave) adds a distinct green, piney stalkiness that cuts through the sweetness of the Espadín, while the Tobalá adds a high-note perfume.
